Chocolate Root Beer Cupcakes

Ingredients

  • 1 egg
  • 3/4 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/3 cup vegetable oil
  • 1/2 tsp ground ginger
  • 1/2 cup granulated sugar
  • 2 tsp root beer flavoring

  • 1 & 1/4 cups all-purpose flour
  • 1/2 cup unsweetened Dutch-process cocoa powder, sifted

Instructions

  1. Preheat the oven at 350 degrees and arrange a cupcake pan with paper liners.
  2. Start mixing in a small bowl, cocoa, cinnamon, ginger, baking soda and salt.
  3. Then on a separate but larger bowl, whisk together sugar, oil, egg and root beer flavoring until smooth.
  4. Whisk in flour mixture and kefir alternately until smooth. Then scoop the mixture in the pan and bake afterwards for about 22-27 minutes.
  5. When the cake is done allow it to cool.
  6. Garnish the cake with a sprinkle of powdered sugar or fold 1/2 tsp of root beer flavoring into whipped cream and top each cupcake.

Chocolate Raspberry Cake

Ingredients

  • 1 tsp kosher salt
  • 1 tsp baking soda
  • 1 Tbsp vanilla extract
  • 1/2 cup vegetable oil
  • 1/3 cup whole wheat flour
  • 3/4 cup unsweetened cocoa
  • 1/3 cup unbleached all purpose flour
  • 3/4 cup sugar

Instructions

  1. Butter and flour either 9×13-inch pan or two 8-inch round cake.
  2. Meanwhile, preheat the oven to 350 degrees.
  3. Combine the vegetable oil, kefir and vanilla in a bowl. On a separated bowl, mix the cocoa, baking soda, flour and salt.
  4. Then add the wet ingredients to the dry ingredients and mix until smooth the spread the mixture into the pan.
  5. Bake afterwards depending on the size of the pan that your using. For small pans, bake for about 20-25 minutes and for the large pans, bake for about 30-35 minutes.
  6. Allow the cake to cool before removing it. Then you cut the cake into half and spread a layer of raspberry jam or just spread the jam on top of the cake.
  7. Dust with powdered sugar the layers of the cake and garnished it with fresh raspberries.

  • ¼ cup vegetable oil
  • 2 ½ cups All Purpose flour
  • 1 tablespoon baking soda
  • ½ c Plain Low fat Kefir
  • Juice of 1 whole orange
  • Zest of ½ lemon
  • 1 cup Chai tea, boiling
  • Juice of 1 whole lemon
  • Zest of ½ orange
  • Zest of ½ lemon

Instructions

  1. Begin by whisking together in a bowl the flour, baking soda and salt.
  2. Meanwhile preheat the oven to 325 F, then stray with cooking spray the 2 cupcake pans or 2.9 inch round cake pans.
  3. Next, mix together in a large bowl the sugar, honey, eggs, oil, kefir, lemon zest, lemon juice, orange zest and orange juice until well combined.
  4. Add in the dry ingredients and combine until just incorporated.
  5. Before pouring the batter into the cake pans you have to add boilng tea into the honey mixture and combined.
  6. Finally, pour batter into prepared cake pans and bake afterwards for about 15 minutes for the cup cakes.
  7. For the larger cakes, bake for about 35-40 minutes.
  8. If you like, you can garnished the cakes with honey and caramelized apple.
