Lemon Cake

Ingredients

  • 3 eggs
  • 1 1/4 cups sugar
  • 1/3 cup canola oil
  • ½ teaspoon kosher salt

  • 2 teaspoons baking powder
  • 2 teaspoons grated lemon zest
  • ½ teaspoon vanilla extract

Instructions

  1. Begin by beating together in a large bowl the eggs, kefir, sugar, vanilla and lemon zest.
  2. Then pour slowly the dry ingredients to the wet ingredients and stir to combine.
  3. Add in the canola oil and mix until combined.
  4. Next, pour the batter into the prepared loaf ban and bake for about 45-50 minutes or until the toothpick inserted comes out clean.
  5. Meanwhile, in a small pan combine the sugar and lemon. In a low temperature, stir frequently until the sugar dissolved.
  6. When the cake is done, allow it to cool before removing it from the pan.
  7. Then brush the lemon-sugar mixture on top.

Chocolate Raspberry Cake

These delicious  recipe is easy to follow. A perfect dessert for the whole family to dig in!

Ingredients

  • 1 tsp kosher salt
  • 1 tsp baking soda
  • 1 Tbsp vanilla extract
  • 1/2 cup vegetable oil
  • 1/3 cup whole wheat flour
  • 3/4 cup unsweetened cocoa
  • 1/3 cup unbleached all purpose flour
  • 3/4 cup sugar
  • 1 cup milk kefir – click here to buy

Instructions

  1. Butter and flour either 9×13-inch pan or two 8-inch round cake.
  2. Meanwhile, preheat the oven to 350 degrees.
  3. Combine the vegetable oil, kefir and vanilla in a bowl. On a separated bowl, mix the cocoa, baking soda, flour and salt.
  4. Then add the wet ingredients to the dry ingredients and mix until smooth the spread the mixture into the pan.
  5. Bake afterwards depending on the size of the pan that your using. For small pans, bake for about 20-25 minutes and for the large pans, bake for about 30-35 minutes.
  6. Allow the cake to cool before removing it. Then you cut the cake into half and spread a layer of raspberry jam or just spread the jam on top of the cake.
  7. Dust with powdered sugar the layers of the cake and garnished it with fresh raspberries.

Potato Soup

Potato soup is great for those night that are cold. A perfect meal for the whole family to enjoy!

Potato SoupIngredients

  • 1 T thyme
  • 1 tsp salt
  • dash pepper
  • 1 tsp parsley
  • 2 C milk
  • 2 T flour or Ultra gel
  • 1 1/2 C Water
  • 2 carrots chopped up
  • 1/2 onion chopped up
  • 3 celery stalks chopped up
  • 7 small potatoes about 3 C chopped in small pieces
  • 1 C Cheddar cheese in chunks or 1/2 lb Velveeta Cheese

Instructions

  1. Put in a pot the water, potatoes, onion, celery, carrots, thyme, salt, pepper, and parsley.
  2. Simmer for about 20 minutes until the  vegetables are tender.
  3. Pour the milk and stir the flour or ultra gel and allow to thicken.
  4. Stir in the cheese and allow it to melt then serve!

Honey Cake

These Honey Cake is wonderful for an afternoon dessert with your family and friends. Make your very own Honey cake at the comforts of your home, just follow simple steps!

  • 3 eggs
  • 1 cup honey
  • ½ teaspoon salt
  • ¼ cup vegetable oil
  • 2 ½ cups All Purpose flour
  • 1 tablespoon baking soda
  • ½ c Plain Low fat Kefir
  • Juice of 1 whole orange
  • Zest of ½ lemon
  • 1 cup Chai tea, boiling
  • Juice of 1 whole lemon
  • Zest of ½ orange
  • Zest of ½ lemon

Instructions

  1. Begin by whisking together in a bowl the flour, baking soda and salt.
  2. Meanwhile preheat the oven to 325 F, then stray with cooking spray the 2 cupcake pans or 2.9 inch round cake pans.
  3. Next, mix together in a large bowl the sugar, honey, eggs, oil, kefir, lemon zest, lemon juice, orange zest and orange juice until well combined.
  4. Add in the dry ingredients and combine until just incorporated.
  5. Before pouring the batter into the cake pans you have to add boilng tea into the honey mixture and combined.
  6. Finally, pour batter into prepared cake pans and bake afterwards for about 15 minutes for the cup cakes.
  7. For the larger cakes, bake for about 35-40 minutes.
  8. If you like, you can garnished the cakes with honey and caramelized apple.
